Halloumi Salad

Ingredients:

  • Halloumi cheese, sliced
  • Mixed greens (e.g., spinach, arugula, and lettuce)
  • Cherry tomatoes
  • Cucumber, sliced
  • Red onion, thinly sliced
  • Kalamata olives
  • Olive oil
  • Balsamic vinegar
  • Dijon mustard
  • Salt and pepper

Instructions:

  • Heat a skillet or grill pan over medium-high heat and cook the halloumi slices until they are browned on both sides.
  • In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  • In a separate bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing.
  • Drizzle the dressing over the salad and top with the grilled halloumi slices.
