- Red bell peppers, cut into chunks
- Red onion, cut into chunks
- Olive oil (always extra virgin)
- Lemon juice
- Fresh herbs (such as basil or mint)
Instructions:
- Thread the halloumi cubes, cherry tomatoes, red bell peppers, and red onion onto skewers.
- Mix olive oil and lemon juice to create a marinade, then brush it over the skewers.
- Grill the skewers until the halloumi is golden and the vegetables are tender, turning occasionally.
- Serve with fresh herbs on top.
