Anari Cheese and Herb Omelette

Anari cheese, also known as “Anari” or “Anari cheese,” is a fresh cheese commonly used in Cypriot cuisine. It’s similar in texture to ricotta cheese and can be used in both sweet and savory dishes. Here’s a simple recipe for a brunch dish featuring Anari cheese.

Ingredients:

  • 4 large eggs
  • 1/2 cup crumbled Anari cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: cherry tomatoes, sliced olives

Instructions:

1/Prepare the Anari Cheese:

  • Place the crumbled Anari cheese in a small bowl. If it’s very dry, you can soak it in warm water for 15-20 minutes to soften it slightly. Then, drain and crumble it further with a fork.

2/ Whisk the Eggs:

  • In a mixing bowl, whisk the eggs until well-beaten.
  • Stir in the chopped parsley, chopped dill, and crumbled Anari cheese.
  • Season the mixture with a pinch of salt and a dash of black pepper. Remember that Anari cheese can be salty, so adjust the salt to taste.

3/ Cook the Omelette:

  • Heat olive oil or butter in a non-stick skillet over medium heat.
  • Pour the egg and Anari cheese mixture into the skillet, spreading it evenly.
  • Cook the omelette for about 2-3 minutes or until the edges start to set.

4/ Add Toppings (Optional):

  • If desired, sprinkle cherry tomatoes, sliced olives, or chopped red onion over one half of the omelette.

5/ Fold and Finish Cooking:

  • Gently fold the other half of the omelette over the toppings, creating a half-moon shape.
  • Continue cooking for another 2-3 minutes until the omelette is fully set and slightly golden on the outside.

7/ Serve:

  • Slide the Anari cheese and herb omelette onto a plate.
  • Garnish with additional fresh herbs, if desired.
